Sorry. I was a huge failure last week. What I Ate Wednesday came much sooner than I expected and I fell unprepared! I had totally forgotten to photograph any meals. And what’s a food post without any pictures of food? You gotta have the pictures, man…that’s what makes readers hungry π
Lucky for you I’m back in business this week. But before I get ahead of myself, here’s some WIAW background:
This is a #WIAW post. The idea of #WIAW is to photograph one day of meals each week, link up to the Peas and Crayons blog, and celebrate the wonderful world of eating (it is truly amazing, after all)! It also gives us the chance to find new recipes by seeing what everyone else eats! So, after reading my blog be sure to stop by peasandcrayons.com to check out what other people ate!!!
Yesterday was full of clean eats. Since I depart for my long vacation today, I’m trying my best to circulate the nutrients through my body before I shock it with some unusual back east food! It’ll be pretty interesting to see how well my clean diet holds up for the next two weeks!
Breakfast
Breakfast was inspired by this chocolate oatmeal recipe, but I added my own twist to it. I was going for a mocha oatmeal type thing, and I think it turned out pretty well! It doesn’t look even slightly appealing, but didn’t fail on taste.
The recipe was very simple:
- 1/2 cup oats
- 3/4 cup milk (I used cashew milk)
- 1 banana
- 1.5 tablespoons cocoa powder
- 1tsp instant coffee
- 1/4 tsp vanilla extract
I mixed it all together and put it in the microwave for 3.5 minutes. Be sure to watch it closely, as it may boil over sooner. As always, cinnamon raisin Ezekiel toast made a yummy side. And the teaspoon of coffee simply wasn’t enough caffeine, so I had a cup on the side too π
AM Snack
Yesterday’s workout was a cycle class. TeelFit Tip: never forget your towel when going to cycle. I was drowning in a pool of my own sweat. Ew. Anyways, I made sure to have a post workout snack packed for after! I’ve been getting a little sick of protein powder and have started carrying actual food in a cooler for after my workouts. Rice cakes with almond butter and a banana actually makes a delicious combo (excuse my legs).
Lunch
I was in a Chipotle mood. Luckily, Chipotle offers some delicious and healthy choices. I got a chicken salad with black beans, fajita vegetables, pico, and corn salsa. TeelFit Tip: If you ask nicely, the people at Chipotle will usually give you the extra veggies and salsa for free! Be sure to smile, but not too creepily.
Afternoon Snacks
Almonds and cashews for some healthy fats.
And one of my six awesome ways to eat a yam….baked and topped with a fried egg!
Dinner
My final dinner at home before vacation. I packed as much health as humanly possible into this meal! Brown rice mixed with Trader Joe’s canned salmon and veggies. Then I had even more veggies on the side with a spinach salad (topped with bell peppers).
PM Snack
A big bowl of goodness! Greek yogurt mixed with apple slices, blueberries, and almond butter.
Plus some Cheerios to cap off the day’s calories. It broke my clean streak, but at least it’s healthy as far as cereal goes π

All your meals look delish! I’ve never taken a cycling class but interested to do so. I’ve never posts a WIAW but doing my first tonight & I’m excited about it lol!! Such a good idea.

Personally I think it’s all about moderation, so heck yeah, Cheerios can count as healthy!

Awesome eats! Your breakfast looks particularly delicious. π I like how you always have snacks between meals to keep your blood sugar steady. Very smart!
