Back to Reality and Why I Need Summer!!

Today means back to school for Vegas students. Yay. (Sarcasm) I just keep telling myself that this means we’re one step closer to summer break!

To motivate myself this morning, I did what I do best: run! I’ve recently started running before school instead of after. I like it way more. One, I feel much more awake in my classes and two, I prefer the morning breeze over the afternoon heat! Also, this leaves time in the afternoons for the gym!

I prepared some overnight oats last night for breakfast after the run. They are delicious. The recipe has no added sugar, but the natural sweetness of the fruit makes sweeteners unnecessary! Plus, it’s the easiest breakfast ever for people on the go.

Here’s the recipe:

  • 1/3 cup uncooked oats
  • 1 tablespoon chia seeds
  • 1/3 cup greek yogurt
  • 1/3 cup milk (I use cashew milk)
  • Banana (sliced)
  • Handful of Blueberries
  • Cinnamon

Mix all of the ingredients together in a covered jar or container and leave it in the fridge overnight. In the morning, add a splash of water or milk, top with any additional toppings of your choice (I top it with almond butter) and enjoy! No cooking required!

Caffeine = an important part of Monday mornings.

I guess I really wasn’t mentally prepared for school today. I forgot to pack my lunch, and that never happens! Food is my top priority! Starbucks came to the rescue though. They’ve always got my back.

Instead of learning today, I thought about summer break. I really need it like RIGHT now. Here’s why I can’t wait until noon on June 4.

1. BodyPump Training

I CAN NOT wait until June 13-14! These are the two days that I will be doing the BodyPump instructor training. I am so ready to demonstrate my love of the program and get one step closer to teaching the class.

2.  Freedom to workout WHENEVER I WANT!!

School is so inconvenient, getting in the way of my workouts and stuff 🙂 I love the summer time because I can workout at any time of the day! I still run in the early mornings to avoid heat stroke, but I have the freedom to go to the gym when I want! I also tend to be more active during the summer. Since I don’t have to sit in class all day, I can go for walks and get off my butt even if I’m not all-out exercising!

3. I have more time to try new recipes.

My food during the school year gets very boring. I just don’t have time to find and make new recipes! There are so many delicious looking healthy meals that I can’t wait to try!

4. Traveling

This summer is going to be full of trips, both to visit family and tour college campuses. It’ll be so nice to get out of the dust bowl of Vegas and explore a little bit 🙂 Enjoy this picture of my favorite vacation spot, SAN DIEGO!!!

5. RELAX

I live for the moment after school gets out when I can take a deep breath and relax for a little bit. The school year takes a lot out of you. When school is finally out, all of the stress seems to fly away for three months. It is truly the most amazing feeling ever.

It seems like an eternity, but there are only 41 School Days Left!! WE CAN DO IT!!!
