April Fool’s!

Happy April Fool’s Day! The Vegas weatherman played the biggest April Fool’s joke ever. “The weather is going to be nice today!” Just kidding, the weather got cooler, but we are paying the price with 500 mph winds. Ah, Mother Nature loves to get our hopes up 🙂

This morning I decided to try something new for breakfast. I found possibly the easiest (and healthiest) pancake recipe ever. I got it from the Internet and can’t get over how simple it is! The only ingredients are a banana, 2 eggs, baking powder, and cinnamon!

First, mash up the banana. Then, in a medium sized bowl, mix the mashed banana, eggs, 1/8 of a teaspoon of baking powder and 1/8 of a teaspoon of cinnamon.

Spray a pan with nonstick spray and put it over medium heat. After the pan is warm, pour about two tablespoons of the batter onto it. After about 30-60 seconds, flip and cook for 30-60 seconds on the other side.

Top with some almond butter (or healthy toppings of your choice) and you’ve got yourself a delicious meal of banana pancakes! I will definitely be making these again!

After breakfast I did some active recovery and went for a walk. I ended up taking a detour and stopped by my school to catch some of the track meet. I may not be part of the team anymore, but I still love coming out to support my friends! 

I have a ton of respect for these athletes! The wind was no joke today, but a lot of kids still ran fast times and qualified themselves into the regional meet!

Once I got home I decided to quit procrastinating and finished my AP homework. I have a bad habit of pushing off my homework during breaks. I know it only creates undo stress, but there are so many other things I would rather be doing! Luckily it was pretty entertaining. I had to read an article that proposed the idea of using infants as food. Don’t ask.

Later, we went to Kohl’s to shop for my dad’s birthday. However, a shopping trip for my dad quickly become a shopping trip for me 😂Usually I’m a very low maintanance child and don’t ask for much. But I found these awesome nikes and begged for them like a five year old begs for ice cream. I even threw a fit in the middle of the store. I’m kidding of course (maybe).

 Then my sister and I headed to gym for a 30 minute HIIT class and CxWorx. HIIT (high intensity interval training) workouts are great for burning lots of calories in a short amount of time. The instructor at my gym sets up different stations. At each one, we raise the heart rate with a 45 second exercise. After going through each station, we have about a minute rest and then go through the rotation again! It’s an efficient workout and tons of fun! A tool pick was only necessary after our hard work.

Tomorrow should be interesting. I get my SAT scores back, can someone say stress? I’m slightly freaking out, but I’m looking forward to seeing how I did. I’ll be sure to keep you guys posted! I hope everyone had an amazing day! Happy Hump Day!
